Ingredients
- 2 large spaghetti squash
- 2 cups broccoli florets
- 2 Tbsp olive oil
- 1 jar (16 oz) Alfredo sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (204°C). Halve the spaghetti squash and remove seeds. Drizzle olive oil inside and place cut-side down on a baking sheet.
- Add broccoli florets to the baking sheet with remaining olive oil and roast everything for about 30 minutes until tender.
- Once cooled, scrape the squash into strands with a fork.
- In a large bowl, mix spaghetti squash strands, roasted broccoli, Alfredo sauce, and half of the mozzarella cheese.
- Transfer to a casserole dish, top with remaining mozzarella, then broil for a few minutes until golden brown.
