Ingredients
- Digestive cookies or graham crackers
- Unsalted butter
- Fresh apple cider
- Cream cheese
- Brown sugar
- Sour cream

Instructions
- Boil fresh apple cider with mulling spices until reduced to about 1/3 cup, then cool.
- Preheat oven to 350°F (175°C).
- In a food processor, blend cookies into fine crumbs and mix with melted butter, salt, and powdered sugar. Press into an 8” springform pan and bake for 10 minutes.
- Lower oven temperature to 325°F (160°C). Beat cream cheese and brown sugar until smooth in a stand mixer. Blend in sour cream, vanilla, salt, cinnamon, and reduced cider.
- Add eggs and flour; mix until just combined. Pour over the crust and bake in a water bath for about 90 minutes.
- Cool gradually in the oven before refrigerating for at least 8 hours before serving.
