Ingredients

  • Digestive cookies or graham crackers
  • Unsalted butter
  • Fresh apple cider
  • Cream cheese
  • Brown sugar
  • Sour cream
  • Eggs
  • Mulling spices

Instructions

  1. Boil fresh apple cider with mulling spices until reduced to about 1/3 cup, then cool.
  2. Preheat oven to 350°F (175°C).
  3. In a food processor, blend cookies into fine crumbs and mix with melted butter, salt, and powdered sugar. Press into an 8” springform pan and bake for 10 minutes.
  4. Lower oven temperature to 325°F (160°C). Beat cream cheese and brown sugar until smooth in a stand mixer. Blend in sour cream, vanilla, salt, cinnamon, and reduced cider.
  5. Add eggs and flour; mix until just combined. Pour over the crust and bake in a water bath for about 90 minutes.
  6. Cool gradually in the oven before refrigerating for at least 8 hours before serving.
