  • 1.5 pounds pork tenderloin
  • 1 cup apple cider
  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 2 large sweet potatoes
  • Butter
  • Heavy cream or milk
  • Thyme
  • Salt
  • Pepper

Instructions

  1. Marinate pork medallions in half a cup of apple cider with garlic, thyme, salt, and pepper for at least 15 minutes.
  2. Boil cubed sweet potatoes in salted water until tender (15-20 minutes). Drain and return to pot.
  3. Heat olive oil in a skillet over medium-high heat. Sear marinated pork for about 3-4 minutes per side until browned.
  4. Sauté sliced onions in the same skillet until softened (3-4 minutes).
  5. Add reserved marinade and remaining cider; bring to a simmer and return pork to skillet. Cook covered for 10-15 minutes until internal temperature reaches 145°F.
  6. For thicker sauce, stir in cornstarch slurry if desired.
  7. Mash sweet potatoes with butter, cream/milk, salt, and optional cinnamon until smooth.
  8. Serve pork over mashed sweet potatoes with sauce drizzled on top.
