  • 34 lbs organic chicken (skin removed)
  • 23 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 1 can full-fat coconut milk
  • 2 medium russet potatoes (peeled & cubed)
  • 2 medium carrots (peeled & chopped)
  • 1 medium bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 13 scotch bonnet peppers (adjust for spice level)
  • 1 cup organic chicken stock

Instructions

  1. In a large bowl, combine the chicken with Jamaican Green Seasoning, curry powder, salt, olive oil, and other seasonings. Marinate for at least one hour.
  2. Heat olive oil in a large pot over medium heat. Sauté minced garlic and ginger until fragrant.
  3. Add chopped vegetables (bell pepper, carrots, potatoes) and cook for about five minutes.
  4. Stir in marinated chicken and pour in coconut milk along with chicken stock. Add sugar and spices.
  5. Bring to a boil, then reduce heat to simmer for about 40 minutes until the chicken is cooked through.
