Ingredients
- 3–4 lbs organic chicken (skin removed)
- 2–3 Tbsps Jamaican Green Seasoning
- 2 Tbsps Jamaican curry powder
- 1 can full-fat coconut milk
- 2 medium russet potatoes (peeled & cubed)
- 2 medium carrots (peeled & chopped)
- 1 medium bell pepper (chopped)
- 3 garlic cloves (minced)
- 1–3 scotch bonnet peppers (adjust for spice level)
- 1 cup organic chicken stock
Instructions
- In a large bowl, combine the chicken with Jamaican Green Seasoning, curry powder, salt, olive oil, and other seasonings. Marinate for at least one hour.
- Heat olive oil in a large pot over medium heat. Sauté minced garlic and ginger until fragrant.
- Add chopped vegetables (bell pepper, carrots, potatoes) and cook for about five minutes.
- Stir in marinated chicken and pour in coconut milk along with chicken stock. Add sugar and spices.
- Bring to a boil, then reduce heat to simmer for about 40 minutes until the chicken is cooked through.
