- 4 cups broccoli florets
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt
- 1/2 tsp fresh cracked black pepper
- 8 oz brick of feta cheese
- 1 tbsp lemon juice
- 2 tbsp lemon zest
- 2 tbsp fresh chopped basil
Instructions
- Preheat the oven to 400°F (200°C). Place quartered broccoli florets in a baking dish, drizzle with olive oil, and season with salt and pepper.
- Create a space in the center of the broccoli and add the feta brick, drizzling with more olive oil and seasoning.
- Bake for about 35 minutes. Meanwhile, cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
- Once baked, stir the feta and broccoli together, gradually adding reserved pasta water until reaching desired creaminess.
- Combine the cooked pasta with the feta-broccoli mixture. Finish with lemon juice, zest, and chopped basil before serving.
