  • 4 cups broccoli florets
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 8 oz brick of feta cheese
  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp fresh chopped basil

Instructions

  1. Preheat the oven to 400°F (200°C). Place quartered broccoli florets in a baking dish, drizzle with olive oil, and season with salt and pepper.
  2. Create a space in the center of the broccoli and add the feta brick, drizzling with more olive oil and seasoning.
  3. Bake for about 35 minutes. Meanwhile, cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
  4. Once baked, stir the feta and broccoli together, gradually adding reserved pasta water until reaching desired creaminess.
  5. Combine the cooked pasta with the feta-broccoli mixture. Finish with lemon juice, zest, and chopped basil before serving.
