  • 1.5 lbs (700 g) baby potatoes, halved
  • 200 g (7 oz) block feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup (150 g) cherry tomatoes, halved
  • Optional: 1/4 cup (35 g) pitted kalamata olives

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss halved potatoes with olive oil, oregano, garlic powder, salt, and pepper until well-coated.
  3. Spread seasoned potatoes on the baking sheet and place the block of feta in the center. Scatter cherry tomatoes and olives around it.
  4. Bake for 25–30 minutes until potatoes are tender and golden brown.
  5. Remove from oven and mash the feta slightly with a fork to mix it with the tomatoes and potatoes.
  6. Garnish with fresh basil or parsley before serving warm.
