Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs and melted butter; press into a springform pan and bake for 8–10 minutes. Cool.
  2. Beat cream cheese until smooth; mix in sugar gradually. Add eggs one at a time, then stir in sour cream, vanilla extract, and mashed bananas.
  3. Pour filling over cooled crust; bake in a water bath for 60–70 minutes until edges are set and center jiggles slightly.
