  • 1 Tb brown sugar
  • 2 teaspoons kosher salt
  • 2 1/2 teaspoons active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter (melted)
  • 2 quarts water (plus 2 cups)
  • 2/3 cup baking soda
  • 1 egg yolk
  • Pretzel salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, brown sugar, and salt. Sprinkle yeast on top and let it sit until bubbly (about 10 minutes).
  2. Attach the bowl to a stand mixer and mix in flour and melted butter until smooth.
  3. Shape dough into a ball, coat with oil in a clean bowl, cover, and let rise until doubled in size (about 1 hour).
  4. In a large pot, bring water and baking soda to a boil while preheating your oven to 450°F.
  5. Divide dough into eight portions. Roll each into a long snake and shape into pretzels.
  6. Boil each pretzel in the baking soda solution for about 30 seconds before transferring to a baking sheet.
  7. Brush with beaten egg yolk mixed with water, sprinkle with salt, and bake for 12–14 minutes until golden brown.
