  • 1 pound thick-cut bacon
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Bake bacon on a parchment-lined baking sheet for 15-20 minutes until crispy; drain on paper towels and crumble.
  2. Whisk eggs and milk in a bowl; season with salt and pepper. Cook in a non-stick skillet with butter until slightly moist; stir in cheeses.
  3. Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally and place the bottom half in a baking dish. Spread egg mixture, then bacon, over the rolls. Top with the other half.
  4. Mix melted butter, Dijon mustard, and garlic powder; brush over the top of the rolls.
  5. Cover with foil and bake for 15 minutes; uncover and bake an additional 5-10 minutes until golden brown.
