Ingredients

  • 4 large shrimp, peeled and deveined
  • 2 salmon fillets (6 oz each)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 4 medium russet potatoes
  • 1 pound fresh green beans

Instructions

  1. Boil the peeled, chopped potatoes in salted water for 15-20 minutes until fork-tender. Drain, mash with milk and butter, then season.
  2. Season shrimp and salmon with Cajun seasoning. In a skillet, heat olive oil to cook shrimp for 2-3 minutes per side. Remove and cook salmon for 4-5 minutes per side until done.
  3. In the same skillet, melt butter and sauté minced garlic. Add heavy cream and chicken broth; let simmer to thicken.
  4. Return seafood to the skillet to warm through in the sauce.
  5. Boil green beans for 3-4 minutes until tender-crisp, then sauté in butter and garlic.
  6. Serve mashed potatoes topped with seafood and sauce alongside green beans.
