- 4 large shrimp, peeled and deveined
- 2 salmon fillets (6 oz each)
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup heavy cream
- 4 medium russet potatoes
- 1 pound fresh green beans
Instructions
- Boil the peeled, chopped potatoes in salted water for 15-20 minutes until fork-tender. Drain, mash with milk and butter, then season.
- Season shrimp and salmon with Cajun seasoning. In a skillet, heat olive oil to cook shrimp for 2-3 minutes per side. Remove and cook salmon for 4-5 minutes per side until done.
- In the same skillet, melt butter and sauté minced garlic. Add heavy cream and chicken broth; let simmer to thicken.
- Return seafood to the skillet to warm through in the sauce.
- Boil green beans for 3-4 minutes until tender-crisp, then sauté in butter and garlic.
- Serve mashed potatoes topped with seafood and sauce alongside green beans.
