  • 2 tablespoons butter
  • 2 tablespoons light brown sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • 2 cups heavy cream
  • 14 ounces sweetened condensed milk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and slice carrots; mix with melted butter, brown sugar, and salt.
  3. Spread on a parchment-lined baking sheet, sprinkle with cinnamon and nutmeg, then bake for 30 minutes until caramelized.
  4. Blend baked carrots with milk until smooth; cool completely.
  5. Whip heavy cream until stiff peaks form.
  6. Combine whipped cream with sweetened condensed milk and cooled carrot puree until thickened.
  7. If using an ice cream machine, churn until soft serve consistency; if not, pour into a loaf pan and freeze.
  8. Transfer to a loaf pan and freeze until solid.
