  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 pack (150g) Boursin Garlic & Fine Herbs cheese
  • 1/2 cup milk or cream
  • 8 oz (225g) pasta of choice (penne, fettuccine, etc.)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)
  • Grated Parmesan cheese for topping (optional)

Instructions

  1. Cook pasta according to package instructions; reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown. Remove from skillet.
  3. In the same skillet, sauté garlic and shallot until fragrant (about 2 minutes).
  4. Lower heat and add Boursin cheese along with milk or cream; stir until smooth.
  5. Return chicken to the pan and mix well with the sauce.
  6. Toss in cooked pasta; add reserved pasta water if needed to loosen the sauce.
  7. Serve warm, garnished with fresh herbs and grated Parmesan if desired.
