Ingredients
- 2 chicken breasts, diced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 pack (150g) Boursin Garlic & Fine Herbs cheese
- 1/2 cup milk or cream
- 8 oz (225g) pasta of choice (penne, fettuccine, etc.)
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
- Grated Parmesan cheese for topping (optional)
Instructions
- Cook pasta according to package instructions; reserve 1/2 cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown. Remove from skillet.
- In the same skillet, sauté garlic and shallot until fragrant (about 2 minutes).
- Lower heat and add Boursin cheese along with milk or cream; stir until smooth.
