  • 1/2 pound boneless skinless chicken (drumsticks recommended)

  • Mirin
  • Brown sugar

Instructions

  1. Cook sushi rice according to package instructions. Mix with salt and optional furikake.
  2. Cut chicken into small pieces; marinate with soy sauce, sake, baking soda, and cornstarch for 30 minutes.
  3. In a small bowl, combine soy sauce, mirin, and brown sugar for the teriyaki sauce.
  4. Heat oil in a nonstick pan over medium-high heat; cook marinated chicken for 2-3 minutes until done.
  5. Add minced garlic, then pour in teriyaki sauce; cook until thickened.
  6. Shape onigiri by wetting hands, scooping rice into palms, adding filling, and forming triangles.
