  • 7 ounces Ghirardelli Bittersweet 60% Cacao Baking Chips
  • 1/2 cup unsalted butter
  • 3 large eggs (separated)
  • 1/2 cup granulated sugar
  • 1/2 cup almond meal
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon kosher salt
  • 3 tablespoons water
  • .25 ounces unflavored powdered gelatin
  • 1 cup milk
  • 4 large egg yolks
  • 1/3 cup granulated sugar
  • 4 ounces fresh strawberries (hulled and finely chopped or pureed)
  • 2 tablespoons strawberry preserves
  • 1 tablespoon lemon juice
  • 1/8 teaspoon kosher salt
  • 1 cup heavy whipping cream
  • Drop of pink food coloring (optional)
  • 3 tablespoons heavy whipping cream
  • 2 ounces Ghirardelli White Chocolate Baking Bar (chopped)
  • 2 tablespoons light corn syrup
  • 1 cup heavy whipping cream (whipped softly with 1/4 cup powdered sugar)
  • 9 Ghirardelli Strawberry Bark SQUARES

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. Melt bittersweet chocolate and butter together until smooth. In a bowl, whisk egg yolks and sugar until fluffy, then combine with the chocolate mixture.
  3. Fold in almond meal, flour, vanilla extract, and salt. Beat egg whites until soft peaks form, then gently fold into the batter.
  4. Pour into the pan and bake for 20 minutes. Cool completely.
  5. For strawberry mousse, bloom gelatin in water, heat milk with yolks and sugar until thickened. Add dissolved gelatin, strawberries, preserves, lemon juice, and salt; fold in whipped cream.
  6. Spread mousse over cooled torte and chill for at least 3 hours before serving.
