Ingredients

  • Mixed greens
  • Grilled chicken breast
  • Hard-boiled eggs
  • Avocado
  • Crispy bacon
  • Blue cheese
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Olive oil
  • Red wine vinegar
  • Dijon mustard

Instructions

  1. Wash and dry mixed greens. Chop grilled chicken into bite-sized pieces and slice hard-boiled eggs, avocado, cherry tomatoes, cucumber, and red onion.
  2. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and chop.
  3. In a large mixing bowl, combine mixed greens and chopped chicken. Layer sliced eggs, avocado, tomatoes, cucumber, red onion, and bacon on top. Sprinkle with blue cheese.
  4. Whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
