Ingredients
- 3 lb boneless chuck roast
- 3 lbs yellow onions
- 2 cloves garlic
- 1 cup red wine (or beef stock)
- 2 1/2 cups beef stock

Instructions
- Preheat oven to 325°F (163°C). Season the chuck roast with salt and pepper.
- In a Dutch oven, heat olive oil and sear the roast until browned on all sides. Remove and set aside.
