  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cups fresh spinach leaves
  • 1/2 cup dried cranberries
  • 4 ounces Brie cheese, sliced
  • Salt and pepper (to taste)
  • Garlic powder, onion powder, dried thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut pockets into each chicken breast without cutting all the way through.
  3. Season the inside and outside of the chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme.
  4. Sauté spinach in olive oil until wilted; combine with cranberries in a bowl.
  5. Stuff each breast with the spinach mixture and slices of Brie cheese; secure with toothpicks.
  6. Sear the stuffed chicken in an oven-safe skillet until golden brown on both sides.
  7. Add chicken broth around the chicken and transfer to the oven.
  8. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  9. Let rest for 5 minutes before serving.
