  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp all-purpose flour
  • 2 cups seafood or chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté onions, celery, and garlic until soft (3–4 minutes).
  2. Stir in tomato paste and seasonings; cook for another 1–2 minutes.
  3. Add flour while stirring to form a roux; cook for 1 minute.
  4. Gradually whisk in broth and simmer for 10 minutes.
  5. Lower heat and stir in cream, Worcestershire sauce, lemon juice, and thyme; simmer for 5 minutes.
  6. Gently fold in crab meat and heat through (2–3 minutes).
  7. Adjust seasoning as desired before serving hot.
