- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp cayenne pepper (optional)
- 2 tbsp all-purpose flour
- 2 cups seafood or chicken broth
- 1 ½ cups heavy cream
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 tsp fresh thyme (or ½ tsp dried)
Instructions
- In a large pot over medium heat, melt the butter. Sauté onions, celery, and garlic until soft (3–4 minutes).
- Stir in tomato paste and seasonings; cook for another 1–2 minutes.
- Add flour while stirring to form a roux; cook for 1 minute.
- Gradually whisk in broth and simmer for 10 minutes.
- Lower heat and stir in cream, Worcestershire sauce, lemon juice, and thyme; simmer for 5 minutes.
- Gently fold in crab meat and heat through (2–3 minutes).
