- 12 oz chicken breast (cut into 1-inch pieces)
- 6.5 cups chicken stock
- 0.75 cup orzo
- 1.5 lemons (juiced)
- 2 egg yolks
- 1 generous handful fresh dill
- 0.5 tsp dried oregano
- salt to taste
- black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion, carrot, and celery until soft (about 5 minutes). Add minced garlic and cook for an additional minute.
- Add chicken pieces and bay leaves; pour in chicken stock and bring to a boil. Reduce heat, cover, and simmer for 20 minutes until chicken is cooked through.
- Stir in orzo pasta and cook according to package instructions until tender.
- In a separate bowl, whisk egg yolks with lemon juice until smooth. Gradually add hot soup to temper the mixture.
- Slowly stir the creamy mixture back into the pot. Add fresh dill, oregano, salt, and pepper to taste. Heat through before serving.
