  • 1 onion (diced)
  • 1 carrot (diced)
  • 3 celery stalks (diced)
  • 3 garlic cloves (minced)
  • 2 bay leaves
  • 12 oz chicken breast (cut into 1-inch pieces)
  • 6.5 cups chicken stock
  • 0.75 cup orzo
  • 1.5 lemons (juiced)
  • 2 egg yolks
  • 1 generous handful fresh dill
  • 0.5 tsp dried oregano
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, carrot, and celery until soft (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. Add chicken pieces and bay leaves; pour in chicken stock and bring to a boil. Reduce heat, cover, and simmer for 20 minutes until chicken is cooked through.
  3. Stir in orzo pasta and cook according to package instructions until tender.
  4. In a separate bowl, whisk egg yolks with lemon juice until smooth. Gradually add hot soup to temper the mixture.
  5. Slowly stir the creamy mixture back into the pot. Add fresh dill, oregano, salt, and pepper to taste. Heat through before serving.
