  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 head of garlic (roasted)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and freshly ground black pepper (to taste)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Allow to cool before squeezing out the cloves.
  2. In a medium saucepan, bring vegetable broth to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain excess broth but reserve some.
  3. Return cooked orzo to the pan over low heat; stir in heavy cream and mashed roasted garlic. Cook for 2-3 minutes.
  4. Gradually mix in Parmesan cheese until melted and smooth. Season with salt and pepper, adjusting consistency with reserved broth if necessary.
