  • 6 slices bacon
  • 3 tbsp olive oil
  • 2 tbsp honey

  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the washed baby potatoes and chop the bacon into small pieces.
  3. In a mixing bowl, combine the potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until well-coated.
  4. Spread the seasoned potatoes on the baking sheet in a single layer and scatter chopped bacon over them.
  5. Roast for 30-35 minutes, flipping halfway through.
  6. In the last 5 minutes of roasting, drizzle honey over the potatoes and bacon before returning to the oven until caramelized.
