  • 2 chicken breasts
  • ½ cup all-purpose flour (or gluten-free)
  • 1 cup cornflakes
  • 4 bread rolls
  • 1 avocado
  • ½ cup cilantro
  • 3 Tbsp lime juice
  • ½ cup sour cream

Instructions

  1. Prepare the sauce by blending olive oil, avocado, cilantro, adobo sauce, lime juice, honey, sour cream, and black pepper until smooth. Refrigerate.
  2. Make the cucumber salad by mixing mayonnaise, apple cider vinegar, honey, garlic powder, and red pepper flakes. Add cucumber slices and toss.
  3. Set up a breading station: mix flour with seasonings in one bowl, beat eggs in another, and crushed cornflakes in the last.
  4. Dredge chicken in flour, dip in eggs, then coat with cornflakes.
  5. Air fry at 360°F for 14-16 minutes or bake at 425°F for 15-20 minutes until golden brown.
  6. Coat cooked chicken in the prepared sauce before assembling on toasted rolls with cucumber salad.
