- 600 g potatoes (about 4 medium), peeled and grated
- 80 g mozzarella cheese, grated
- 2 large eggs
- 150 g baby spinach
- 200 g champignon mushrooms, sliced
- 100 g mozzarella cheese, grated
- 30 g Parmesan cheese, grated
- Olive oil, salt, pepper, parsley, garlic, green onion, dried oregano
Instructions
- Preheat your oven to 180°C (350°F).
- Peel and grate the potatoes; squeeze out any excess moisture using a kitchen towel.
- In a mixing bowl, combine grated potatoes with mozzarella cheese, eggs, parsley, salt, pepper, oregano, and olive oil.
- In a frying pan over medium heat, sauté garlic in olive oil until fragrant. Add mushrooms; cook until softened. Stir in spinach until wilted; season with salt and pepper.
- In a greased baking dish, layer half of the potato mixture followed by half of the sautéed vegetables and half of each type of cheese. Repeat layers finishing with the remaining potato mixture on top.
- Bake for about 55 minutes or until golden brown. Let cool slightly before slicing.
