Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- Juice and zest of 1 large lime
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- Make the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Set aside.
- Boil water in a large pot and cook shrimp for 2-3 minutes until pink. Remove with a skimmer.
- Prepare an ice water bath; transfer cooked shrimp to cool for about 3 minutes before draining.
- Chop cooled shrimp into bite-sized pieces and combine with cucumber, green onion, and dressing in a mixing bowl.
