  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together eggs, brown sugar, granulated sugar, vegetable oil, and vanilla until smooth.
  3. Fold in grated carrots until well combined.
  4. In another bowl, mix flour, cinnamon, nutmeg, ginger, salt, baking powder, and baking soda.
  5. Gradually combine the dry ingredients into the wet mixture; fold in optional walnuts if desired.
  6. Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
  7. Allow bars to cool completely before preparing the frosting.
  8. Beat softened cream cheese and butter until fluffy; add vanilla and gradually incorporate powdered sugar until smooth.
