  • 1 lb ground chicken
  • 8 small tortillas
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup shredded cabbage
  • ½ cup chopped dill pickles
  • 2 tbsp pickle brine
  • ½ cup cottage cheese
  • 1 tsp ranch seasoning
  • Juice of ½ lemon

Instructions

  1. In a mixing bowl, combine the ground chicken, garlic powder, paprika, salt, and pepper. Form into 8 equal-sized balls.
  2. Heat a skillet over medium heat and add one tortilla.
  3. Sprinkle cheese on top of the tortilla and place one chicken ball on the cheese.
  4. Smash down with a spatula to flatten and cook for about 2 minutes until cheese is melted.
  5. Flip carefully and cook for another 3-4 minutes until chicken is cooked through.
  6. In a separate bowl, mix shredded cabbage, dill pickles, and pickle brine for the slaw.
  7. Blend cottage cheese, ranch seasoning, and lemon juice for the ranch drizzle.
  8. Assemble tacos by layering slaw, smashed chicken, and ranch drizzle before serving.
