  • 1 lb salmon, cubed
  • 1 ½ cup uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook sushi rice according to package instructions until fluffy.
  3. Mix rice vinegar and sugar in a microwave-safe bowl; heat until dissolved. Combine with the cooked rice.
  4. In a mixing bowl, combine cubed salmon, soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares to fit muffin tin slots.
  6. Lightly grease muffin tin; press sushi rice into each nori square. Top with salmon mixture.
  7. Bake for 15 minutes until salmon is cooked through and tops are golden.
  8. Garnish with furikake and green onions; serve warm.
