- 1/4 teaspoon grated lemon peel
- 1/8 teaspoon black pepper
- 4 slices whole-grain bread
- 2 thin slices red onion
- 1/2 cup alfalfa sprouts
Instructions
- In a medium bowl, mix diced cucumber with salt and let it sit for 10 minutes to drain excess moisture.
- In a large bowl, combine Greek yogurt, feta cheese, chopped herbs, lemon juice, lemon peel, and black pepper. Mix well.
- Drain the cucumbers and pat dry with paper towels. Fold them into the yogurt mixture until evenly coated.
