  • 1 pound Canadian bacon, diced
  • 6 English muffins, split and cut into 1-inch pieces
  • 8 large eggs
  • 2 cups whole milk
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 3 teaspoons chopped fresh parsley, for garnish
  • ½ cup hollandaise sauce (store-bought or homemade)

Instructions

  1. Grease a 9×13 inch baking dish with non-stick cooking spray.
  2. Layer half of the Canadian bacon in the dish, followed by half of the English muffin pieces.
  3. Repeat with remaining Canadian bacon and English muffins.
  4. In a large bowl, whisk together eggs, milk, onion powder, salt, garlic powder, and black pepper.
  5. Pour the egg mixture over the layered ingredients.
  6. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  7. Preheat oven to 375°F (190°C).
  8. Remove plastic wrap and sprinkle paprika on top.
  9. Bake for 35–40 minutes until set and golden brown.
  10. Warm hollandaise sauce while casserole bakes.
  11. Let cool slightly before drizzling with hollandaise and garnishing with parsley.
