  • 1 lb enoki mushrooms
  • 1/2 cup all-purpose flour
  • 1/3 cup potato starch
  • 3/4 cup cold sparkling water
  • Garlic powder, paprika, five spice powder (for seasoning)
  • Neutral oil (for frying)

Instructions

  1. Trim the ends of the enoki mushrooms and slice them into thin layers.
  2. Heat about 2–3 inches of neutral oil in a heavy-bottomed pot until it reaches 375°F (190°C).
  3. In a large bowl, whisk together the flour, potato starch, baking powder, and seasonings. Gradually add cold sparkling water until smooth.
  4. Dredge the mushroom clusters in the batter, allowing excess to drip off.
  5. Fry the mushrooms in small batches for 1–2 minutes until golden brown using a spider strainer.
  6. Drain on a wire rack and season immediately with salt and furikake.
