- 2 teaspoons dried oregano
- 1/2 cup freshly grated Parmigiano Reggiano cheese
- 2 tablespoons fresh parsley, finely chopped
- 1 New York Striploin steak
- Salt and freshly ground black pepper to taste (for the steak)
- 2 tablespoons beef tallow
- 1/2 cup lemon herb aioli, for serving
- Fresh chives, finely snipped (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and uniformly slice the Russet potatoes into 1/2-inch thick fries.
- Rinse the sliced potatoes under cold water to remove excess starch.
- Pat them thoroughly dry with paper towels.
- In a large bowl, toss the dried potato slices with olive oil, kosher salt, black pepper, garlic powder, and dried oregano until evenly coated.
- Spread the seasoned potato slices in a single layer on two parchment-lined baking sheets and bake for 20–25 minutes until they start to turn golden.
- Remove the fries from the oven, flip each wedge gently, and sprinkle half of the Parmigiano Reggiano cheese over them. Return to oven for another 10–15 minutes.
- Continue baking for a final 10–15 minutes or until fries are tender, crispy, and golden brown. Immediately sprinkle with remaining cheese over hot fries.
- While the fries bake, pat the steak dry and season generously with salt and pepper. Heat beef tallow in a skillet over medium-high heat until shimmering. Sear the steak for about 3–4 minutes per side for medium-rare, adjusting time according to desired doneness.
- Transfer the cooked steak to a cutting board and let it rest for 5–10 minutes before slicing against the grain into thick pieces. Serve your Garlic Parmesan Steak Fries alongside sliced steak, drizzle with lemon herb aioli, and garnish with fresh parsley and chives if desired.
