  • 1¼ cups coconut sugar
  • ¾ cup + 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup blanched almond flour
  • 1 cup fresh strawberries, diced
  • Optional: 1 cup dark chocolate chunks

Instructions

  1. Preheat oven to 325ºF and line an 8-by-8-inch baking pan with aluminum foil; spray with cooking spray.
  2. In a microwave-safe bowl, melt coconut oil, coconut sugar, cocoa powder, and sea salt for about 45 seconds. Stir until smooth and let cool slightly.
  3. Whisk in vanilla and eggs until thick. Add almond flour and mix until combined. Fold in dark chocolate chunks if using.
  4. Pour batter into the prepared pan and bake for 22-25 minutes until a toothpick comes out slightly moist.
  5. Once cooled, sprinkle diced strawberries on top. Mix remaining coconut oil, cocoa powder, and maple syrup; drizzle over strawberries.
  6. Refrigerate for at least one hour before cutting into squares.
