  • 1 recipe Best Gluten-Free Flaky Pie Crust
  • 6 tablespoons strawberry jam
  • 1 cup organic powdered sugar
  • 4 teaspoons water
  • 1/4 teaspoon vanilla extract
  • small pinch of beet powder (for coloring), optional
  • 2 teaspoons unsweetened shredded coconut (in lieu of sprinkles), optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the gluten-free pie crust according to the recipe directions and form it into a disk.
  3. Roll out the dough between two sheets of parchment until about 1/8 inch thick.
  4. Cut out 10 pieces using a 4-inch cookie cutter.
  5. Place 1 tablespoon of strawberry jam in the center of half the cut-out shapes, leaving a border for sealing.
  6. Moisten edges with water, place another dough piece on top, and crimp edges with a fork.
  7. Bake for 10 minutes at 400°F then reduce heat to 350°F and bake for an additional 15 minutes until golden.
  8. Cool completely before glazing with a mixture of powdered sugar, water, vanilla extract, and optional beet powder.
