Ingredients
- 1 cup plain Greek yogurt
- 4 cloves garlic (minced)
- 2 lbs boneless, skinless chicken thighs
- 2 tablespoons fresh lemon juice (divided)
- 1 medium cucumber
- 1/2 cup crumbled feta cheese
- 6–8 warm pita bread wraps
- Fresh veggies: lettuce, tomatoes, cucumber, red onion
Instructions
- In a large bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, oregano, cumin, paprika, coriander, salt, and black pepper to create the marinade.
- Add chicken thighs to the marinade; coat thoroughly. Cover and refrigerate for at least 2 hours or overnight.
- Prepare tzatziki by grating cucumber and squeezing out excess water. Mix it in a medium bowl with Greek yogurt, minced garlic, lemon juice, olive oil, dill, feta cheese, salt, and pepper. Refrigerate until serving.
- Preheat your grill or grill pan to medium-high heat. Grill marinated chicken for 6–7 minutes per side until cooked through (165°F internal temp). Rest for 5 minutes before slicing.
- Warm pita bread on the grill or in a skillet for about 30 seconds.
- Assemble gyros by spreading tzatziki on each pita and topping with sliced chicken and fresh veggies.
