  • 1 lb shrimp (peeled and deveined)
  • 4 large flour tortillas
  • 2 cups romaine lettuce (chopped)
  • 1/2 cup mayonnaise
  • 2 tbsp Parmesan cheese (grated)
  • 1 tbsp lemon juice
  • Optional: croutons, cooked and crumbled bacon

Instructions

  1. Toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper in a bowl.
  2. Preheat the grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes per side until pink and opaque.
  3. In another bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic; season to taste.
  4. Warm tortillas in a skillet for about 30 seconds on each side. Spread Caesar dressing on each tortilla.
  5. Layer grilled shrimp and chopped romaine lettuce on top of the dressing. Add shaved Parmesan cheese and optional toppings.
  6. Fold sides inward and roll tightly from the bottom up. Slice in half diagonally before serving.
