  • 1 Strawberry Cake Mix (15 oz)
  • 1 1/2 cups Guava Nectar or Juice
  • 3 eggs (room temperature)
  • 1/3 cup Coconut Oil (liquid)
  • 10 oz Cream Cheese (room temperature)
  • 8 oz Cool Whip (thawed)
  • 1/2 cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine the strawberry cake mix with guava nectar, eggs, and coconut oil. Mix until well combined.
  3. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  4. While the cake bakes, beat cream cheese with sugar and vanilla until smooth. Fold in Cool Whip gently.
  5. For the glaze, heat guava nectar with sugar in a saucepan. Mix cornstarch with water and add to the pan until thickened.
  6. Once cooled, spread cream cheese mixture over the cake and drizzle glaze on top.
