- salt and pepper to taste
- 1 tsp olive oil (for corn)
- ½ tsp cumin
- pinch of cayenne pepper
- 1 tbsp chopped cilantro
Instructions
- Marinate chicken in olive oil, lime juice, chili powder, smoked paprika, garlic, salt, and pepper for 20–30 minutes.
- Grill marinated chicken over medium-high heat for 5–6 minutes per side until cooked through (165°F). Let rest before slicing.
- Brush corn with olive oil and grill until charred (8–10 minutes). Cut kernels into a bowl.
- Toss grilled corn with cumin, cayenne pepper, cilantro, and lime juice.
- Whisk together Greek yogurt with lime juice and seasonings for the dressing.
- Assemble bowls with romaine lettuce as the base; top with sliced chicken, corn mix, cherry tomatoes, red onion, and bell pepper.
- Drizzle yogurt dressing over each bowl and garnish as desired.
