Ingredients
- 2 1/4 cups all-purpose flour

- 1/2 cup neutral oil
- 1 tablespoon lemon juice

- 1 1/4 cups raspberries (fresh or frozen)
- 3/4 cup raspberries (fresh or frozen)
- 1 1/2 tablespoons granulated sugar (or to taste)
- 1 tablespoon cornstarch / corn flour
- 1 cup vegan butter
- 3–4 cups powdered sugar / icing sugar (to taste)
- 2 1/2 tablespoons freeze-dried strawberry powder
- 1 teaspoon vanilla extract
- Dairy-free milk (if needed)
Instructions
- Preheat oven to 350°F (175°C) and prepare two round cake pans by greasing them or lining with parchment paper.
- In a large bowl, mix the dry ingredients: flour, sugar, baking powder, lemon zest, and salt.
- In another bowl, combine wet ingredients: dairy-free milk, oil, lemon juice, and vanilla extract.
- Gradually add the wet mixture to the dry ingredients and stir until just combined. Gently fold in fresh raspberries.
- Divide batter between prepared pans and bake for 30-35 minutes until a toothpick comes out clean. Cool cakes completely on a wire rack.
- Prepare berry filling by simmering raspberries with sugar and cornstarch until thickened; let cool.
- For buttercream, beat vegan butter until creamy; gradually add powdered sugar and strawberry powder until desired consistency is reached.
- Assemble the cake by layering one cake on a plate, adding berry filling on top, then placing the second layer above it. Frost with berry buttercream.
