Ingredients
- 125 g unsalted butter (room temperature)
- 60 g caster sugar
- 1 tsp vanilla extract
- 180 g plain flour (all-purpose)
- ¼ tsp fine salt
- 170 g strawberry jam
- For glaze: 110 g powdered icing sugar, 2 tbsp strawberry puree, 1 tsp melted butter, 30 ml milk
Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy. Mix in the vanilla extract.
- Gradually add flour and salt, mixing until a soft dough forms.
- Roll out the dough to about 0.5 cm thick and cut out heart shapes using a cookie cutter.
- Place on the baking sheet and bake for about 12 minutes or until lightly golden.
- Cool cookies and spread strawberry jam on half of them, topping with another cookie to create sandwiches.
- Optionally dip in glaze made from powdered sugar, strawberry puree, melted butter, and milk.
