- 4 bell peppers (any color)
- 1 tbsp olive oil
- 4 cups fresh spinach
- 1 15-oz tub ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- ½ cup sliced green onions
- ½ cup chopped fresh basil
- 2 large eggs
- Assorted dried herbs (rosemary, thyme, fennel seed)
Instructions
- Preheat oven to 400°F (204°C). Halve and seed the bell peppers, placing them cut-side up on a parchment-lined baking sheet. Brush with olive oil and bake for 20 minutes.
- Microwave spinach until wilted, then chop and mix with ricotta, mozzarella, parmesan, green onions, basil, eggs, and dried herbs in a large bowl.
- Fill each pepper with the ricotta mixture and top with breadcrumbs mixed with a little oil.
