Ingredients
- 24 oz chicken breast (cut into 1-inch chunks)
- 3 cups cooked rice (preferably day-old)
- 3 cups peas and carrots
- 3 eggs
- 2 tbsp avocado oil
- 5 tbsp coconut aminos
- Salt and black pepper to taste
Instructions
- In a bowl, mix chicken pieces with baking soda. Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Cook the chicken until golden brown, about 5–7 minutes. Remove from pan.
- In the same skillet, add another tablespoon of oil and scramble the eggs until fully cooked. Set aside with the chicken.
- Add remaining oil to the skillet, stir-fry green onion whites with peas and carrots for about 2–3 minutes. Add rice, coconut aminos, garlic powder, salt, and pepper; mix well.
- Return chicken and scrambled eggs to the skillet with rice mixture and stir until all ingredients are well combined.
