  • 1 lb pasta (rotini or penne)
  • 1 cup marinated artichokes
  • 1 cup black olives
  • 1 cup stuffed green olives
  • 1 cup pepperoncini
  • 1 cup ham (diced)
  • 1 cup salami (diced)
  • 1 cup thinly sliced onion
  • 1 cup grated Parmesan cheese
  • ½ cup chopped fresh parsley
  • ¾ cup olive oil
  • ¼ cup rice wine vinegar
  • ¼ cup lemon juice
  • 1 tsp minced garlic
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes
  • 1 tsp salt

Instructions

  1. Cook pasta in salted boiling water according to package directions. Drain and rinse under cold water.
  2. In a jar, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake until emulsified.
  3. In a large mixing bowl, combine cooked pasta with artichokes, olives, pepperoncini, ham, salami, onion, and parsley. Pour half of the dressing over and toss gently.
  4. Top with Parmesan cheese and drizzle remaining dressing before serving.
