Ingredients
- 1 lb pasta (rotini or penne)
- 1 cup marinated artichokes
- 1 cup black olives
- 1 cup stuffed green olives
- 1 cup pepperoncini
- 1 cup ham (diced)
- 1 cup salami (diced)
- 1 cup thinly sliced onion
- 1 cup grated Parmesan cheese
- ½ cup chopped fresh parsley
- ¾ cup olive oil
- ¼ cup rice wine vinegar
- ¼ cup lemon juice
- 1 tsp minced garlic
- ½ tsp onion powder
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp red pepper flakes
- 1 tsp salt
Instructions
- Cook pasta in salted boiling water according to package directions. Drain and rinse under cold water.
- In a jar, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake until emulsified.
- In a large mixing bowl, combine cooked pasta with artichokes, olives, pepperoncini, ham, salami, onion, and parsley. Pour half of the dressing over and toss gently.
- Top with Parmesan cheese and drizzle remaining dressing before serving.
