  • 2 1/2 lb zucchini
  • 3/4 cup extra-virgin olive oil
  • 1 cup diced sweet onion
  • 1 1/2 tbsp minced garlic
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 cup heavy cream
  • 3/4 cup finely grated romano cheese
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh basil (to finish)
  • 2 tbsp chopped fresh oregano (to finish)
  • 2 tbsp chopped fresh mint (to finish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (3-4 minutes).
  3. Add sliced zucchini, minced garlic, salt, and pepper. Cook until zucchini is tender (6-8 minutes).
  4. Pour in heavy cream and let simmer for 5 minutes.
  5. Stir in romano cheese and fresh herbs until well combined.
  6. Toss cooked pasta into the skillet with the sauce until evenly coated.
  7. Serve hot, garnished with additional herbs.
