- 12 oz dry pasta
- 2 1/2 lb zucchini
- 3/4 cup extra-virgin olive oil
- 1 cup diced sweet onion
- 1 1/2 tbsp minced garlic
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 1 cup heavy cream
- 3/4 cup finely grated romano cheese
- 2 tbsp chopped fresh basil
- 2 tbsp chopped fresh oregano
- 2 tbsp chopped fresh mint
- 2 tbsp chopped fresh basil (to finish)
- 2 tbsp chopped fresh oregano (to finish)
- 2 tbsp chopped fresh mint (to finish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (3-4 minutes).
- Add sliced zucchini, minced garlic, salt, and pepper. Cook until zucchini is tender (6-8 minutes).
- Pour in heavy cream and let simmer for 5 minutes.
- Stir in romano cheese and fresh herbs until well combined.
- Toss cooked pasta into the skillet with the sauce until evenly coated.
