Ingredients
- 8 large collard green leaves
- 4 ounces shirataki noodles
- 1 lb shrimp (deveined and peeled)
- 1 cup cabbage (thinly sliced)
- 2 medium carrots (cut into matchsticks)
- â…“ cup keto peanut butter
- Soy sauce
- Lime juice
- Garlic
- Ginger
- Sesame oil
Instructions
- Bring a large pot of water to boil. Blanch each collard green leaf for about 15 seconds until soft. Remove and dry completely.
- Rinse and drain shirataki noodles. Sauté in a pan with toasted sesame oil and minced garlic for about 5 minutes.
- Whisk together the sauce ingredients until smooth.
- Take one collard green leaf, add peanut sauce and filling ingredients, then roll tightly like a burrito.
- Repeat until all ingredients are used.
