- 3 tablespoons milk
- 2 tablespoons fresh squeezed lemon juice
- 1 tablespoon lemon zest
- 1/2 cup frozen raspberries, chopped

- 1 cup confectioners’ sugar (for raspberry glaze)
- 1–2 frozen raspberries (for raspberry glaze)
- 1 tablespoon plus 1 teaspoon water (for raspberry glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In one bowl, mix gluten-free flour, baking powder, and salt. In another bowl, cream together butter and sugar until fluffy; add cornstarch mixture, milk, lemon juice, and zest.
- Gradually combine dry ingredients with wet ingredients; gently fold in raspberries.
- Scoop dough into balls, roll in lemon sugar mixture, and place on the baking sheet.
- Bake for 12–15 minutes or until edges are lightly golden. Cool before adding raspberry glaze.
