  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth or vegetable broth
  • 4 oz full-fat cream cheese (softened)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (julienned)
  • ½ cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cabbage into eight wedges while keeping the core intact.
  3. In a cast iron skillet over medium-high heat, add olive oil and sear each wedge for about 2-3 minutes per side until golden brown. Remove from skillet.
  4. Reduce the heat and add butter; sauté red onion until softened, then add minced garlic.
  5. Deglaze the pan with chicken broth and scrape up browned bits.
  6. Stir in cream cheese until melted, followed by heavy cream and sun-dried tomatoes along with seasonings.
  7. Incorporate grated Parmesan until melted, then return cabbage wedges to skillet and spoon sauce over them.
  8. Cover the skillet with foil and bake for about 45 minutes; uncover and baste for an additional 15-20 minutes until fork-tender.
  9. Let rest for five minutes before serving; garnish with fresh parsley.
