- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice

- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup basmati rice
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley

Instructions
- Marinate the chicken: Mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
