  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 1 can (14 oz) artichoke hearts (drained and quartered)
  • 1/2 cup pitted green olives (halved)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/2 red onion (sliced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. Heat olive oil in an ovenproof skillet over medium-high heat; sear chicken on both sides until golden brown (3-4 minutes each side). Remove from skillet.
  4. In the same skillet, sauté sliced red onion and minced garlic for about 2 minutes.
  5. Stir in artichokes and olives; cook for another 2 minutes.
  6. Add chicken broth, white wine (if using), lemon juice, and zest; bring to a simmer.
  7. Return chicken to skillet; spoon sauce over each breast.
  8. Transfer skillet to oven; bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish with fresh parsley before serving.
