Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil

- 1 can (14 oz) artichoke hearts (drained and quartered)
- 1/2 cup pitted green olives (halved)
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 1/2 red onion (sliced)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
- Heat olive oil in an ovenproof skillet over medium-high heat; sear chicken on both sides until golden brown (3-4 minutes each side). Remove from skillet.
- In the same skillet, sauté sliced red onion and minced garlic for about 2 minutes.
- Stir in artichokes and olives; cook for another 2 minutes.
- Add chicken broth, white wine (if using), lemon juice, and zest; bring to a simmer.
- Return chicken to skillet; spoon sauce over each breast.
- Transfer skillet to oven; bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley before serving.
