  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (about 110°F)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually mix into the yeast mixture.
  3. Knead the dough until smooth (5 minutes with a stand mixer or 8 minutes by hand).
  4. Add chopped rosemary and grated parmesan to the dough, form into a ball, cover, and let rise for about an hour.
  5. Preheat oven to 425°F and line a baking sheet with parchment paper.
  6. Punch down dough, divide into 8 pieces, flatten each piece, place mozzarella in the center, and seal.
  7. Roll each piece into a rope and twist into pretzel shapes on the baking sheet.
  8. Boil water in a saucepan; add baking soda and boil pretzels for 30 seconds each before draining on paper towels.
  9. Brush with melted butter and sprinkle with coarse sea salt before baking for 12–15 minutes until golden brown.
