  • 1/3 cup pesto
  • 1 cup low sodium chicken broth
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a nonstick skillet over medium-high heat.
  2. Add frozen tilapia fillets in a single layer and cook for 10-11 minutes, flipping halfway, until golden brown and cooked through (145°F internal temperature).
  3. Transfer tilapia to a plate and reduce heat to low.
  4. In the same skillet, combine heavy cream and pesto. In a separate bowl, whisk chicken broth with cornstarch, then add it to the skillet.
